Reading a Coffee Bag Before You Brew
A plain guide to coffee labels, roast levels, grind and water ratios, and how to fix a bitter or sour cup at home.

A coffee bag tells you more than most drinkers use. The roast date, the origin and the tasting notes on the label are the three pieces of information that decide how the cup will taste, and they are the same three pieces a home brewer can act on before the water ever touches the grounds. Reading them in order, roast first, then origin, then notes, is the shortest path from a bag on the shelf to a repeatable cup.
What the roast date and roast level actually tell you
Roast level describes how far the bean was taken through heating, and it changes what the bean gives up in water. A light roast keeps more of the bean's own acidity and fruit, and it is denser, so it resists extraction. A dark roast has been pushed further: sugars have caramelized, oils have moved to the surface, and the bean gives up its flavor faster and with less resistance. A medium roast sits between the two and is the range most bags in a supermarket fall into.
Freshness is a separate axis. Coffee releases carbon dioxide for days after roasting, and that gas pushes water away during brewing. A bag roasted two days ago will behave differently from one roasted three weeks ago, even at the same roast level. This is why the roast date matters more than a best-by date, which is usually set months out and says little about the state of the bean. A practical window for most home brewers is roughly four days to four weeks after the roast date, with the first days producing a gassy, uneven cup and the later weeks producing a flatter one.
The label also carries origin and tasting notes. Origin is a broad signal: a washed Ethiopian coffee and a Brazilian natural will not taste alike, and the notes printed on the bag are the roaster's attempt to name what that difference tastes like. They are not instructions. They are a description of what the roaster found in the cup, and they are most useful as a check on your own brewing, not as a promise.

Which grind and ratio fit each brewing method
Grind size controls how fast water can pull flavor out of the coffee. Too coarse and the water passes through before it has taken much; too fine and it takes too much, including the compounds that read as bitter. Every method has a working range, and the range is set by how long the water stays in contact with the grounds.
A pour-over cone with a paper filter uses a medium grind and a brew time of roughly two and a half to three and a half minutes. A French press uses a coarse grind and a four-minute steep, then a slow plunge. An AeroPress sits closer to a medium-fine grind with a short steep, often one to two minutes, and it is the most forgiving of the three when the grind is slightly off.
Ratios are easier to hold steady than grind, because they are measured in weight. A common starting point is 1 part coffee to 16 parts water by weight, which means 15 grams of coffee to 240 grams of water for a single mug. Stronger cups move toward 1 to 14, lighter ones toward 1 to 18. Water temperature matters too: most home brewing sits between 195 and 205 degrees Fahrenheit, and a full boil poured straight onto light-roasted coffee tends to flatten it.
A scale is the single piece of equipment that changes results most, because it removes the guesswork from both ratio and yield. A brewer who weighs coffee and water can change one variable at a time; a brewer who scoops cannot.
Why is my coffee bitter or sour?
Bitterness and sourness are not the same fault, and they point in opposite directions.
Bitterness usually means over-extraction. The water stayed too long, the grind was too fine, the temperature was too high, or the ratio put too much coffee against too little water. The fix is to move one variable at a time: coarsen the grind slightly, shorten the brew by fifteen seconds, or drop the water temperature a few degrees. Changing all three at once makes the next cup unreadable.
Sourness, or a thin and sharp taste, usually means under-extraction. The water moved through too fast, the grind was too coarse, or the coffee is very fresh and still releasing gas. The fix runs the other way: grind finer, extend the contact time, or let the bag rest another few days.
A cup can also be both, which happens when the grind is uneven and some particles give up everything while others give up almost nothing. A consistent grinder solves more cups than any recipe. If a bag tastes sour on day two and balanced on day six, the coffee did not change; the gas did.
How to fix a batch that went wrong
A spoiled batch is information, not waste. Before changing anything, write down what you did: dose, water weight, grind setting, temperature and total time. Then change exactly one of those numbers for the next brew and compare.
If the cup is bitter, coarsen the grind by one step and keep everything else the same. If it is sour, go one step finer. If the change helps but does not solve it, repeat the same adjustment rather than switching variables. Two or three brews usually locate the problem.
There is a limit to what adjustment can fix. Coffee that has been open for two months, or stored somewhere warm and damp, will taste flat no matter the grind. Which raises the storage question.
Does freezing coffee beans work?
Freezing can preserve coffee well, with conditions. The enemy of stored coffee is oxygen, moisture, heat and light, and a freezer removes heat from that list. The problem is moisture: every time a bag comes out of the freezer and warms up, condensation forms on the beans, and repeated cycles degrade them faster than room temperature would.
The workable approach is to divide a bag into portions sized for a few days, seal each portion tightly, and freeze the portions you are not using. Take one out, let it come to room temperature before opening, and grind it without returning it to the freezer. Whole beans freeze better than ground coffee, because the surface area exposed to air is far smaller.
A sealed bag kept in a cool, dark cupboard and finished within a few weeks is simpler and works well for most households. Freezing is worth the trouble mainly for larger quantities or for coffee that will not be drunk soon.
What to do with the label next time
Read the roast date first and decide whether the bag is in its window. Read the roast level second and set a starting grind and temperature to match it. Read the origin and notes last, and treat them as a description to compare against your own cup rather than a target to hit.
Then brew, taste, and change one thing. The label is a set of starting conditions, and the cup in front of you is the only result that matters.
