How Food Quality Is Built Along the Chain

Quality in food is not a single act of inspection at the end. It is built step by step along the chain, from soil and feed to storage, processing, and the final package. In Italy, public authorities and private certification bodies check different stages, and the certifications that matter most for bread and eggs are the ones tied to a defined product specification and an independent audit.
Quality is built at every stage, not only at the end
The word chain is useful because it describes a sequence of controlled steps. A loaf of bread begins with a wheat variety, a field, a harvest date, and a storage silo. Each of those steps leaves a trace: the variety affects protein and gluten behavior, the harvest date affects moisture, and storage conditions affect mold and pests. Which product certifications actually matter for bread and eggs?

Bread itself has few PDO or PGI entries, but flour and other bakery ingredients can carry them. For eggs, the situation is different because the mandatory marking already carries a large amount of information. The weakest points in most chains are the transitions: from field to storage, from storage to mill, from mill to bakery, from farm to packing center. These are the moments when a product changes hands and when records can be lost.
