Cooking by absorption and wok heat
A field guide to absorption rice, wok heat on domestic stoves, and the order of Provencal vegetables, with sources named and checked.

Two cooking methods decide most of what happens in a home kitchen: absorption, where rice or grains take up a measured liquid, and conduction, where a wok moves heat from a small burner into wet vegetables. Neither is a matter of style. Both are physical processes with limits you can measure, and both reward a cook who watches water, starch, and pan temperature rather than a clock. What decides between carnaroli and arborio?
The choice is about amylose, the starch fraction that holds a grain together. Carnaroli carries a higher amylose content than arborio, so its grains resist stirring and release starch more slowly. Arborio releases starch faster and softens sooner, which suits a risotto that will be eaten immediately and a cook who wants the creaminess to arrive early. Carnaroli tolerates a longer window between the last stir and the plate, which matters when a second course is still in the oven.
A practical test at the shop is to look at the grain. Carnaroli grains are long and glassy with a faint chalky core; arborio is rounder and more uniformly pearly. Neither is better. The question is how much structure you want left when the rice reaches the table.
Liquid ratio follows from that. A common starting point is one part rice to three parts liquid by volume for a firm risotto, adjusted during cooking rather than fixed at the start. The rice tells you when it is ready: the grain should be tender at the edge and faintly resistant at the center, a state Italian cooks call al dente, and the liquid should have thickened into a loose sauce that runs when the pan is tilted.
How does mantecatura actually work?
Mantecatura is the final off-heat step where butter, cheese, or oil is beaten into the rice. It is an emulsion, and emulsions need two conditions: enough starch in the liquid to stabilize the fat, and enough movement to break the fat into small droplets.
The pan must leave the heat first. If the rice is still bubbling, the fat separates and the sauce turns oily at the edges. Add cold butter in cubes, not a single block, and stir hard for thirty to sixty seconds. The starch that came off the grains during cooking coats the droplets and holds them in suspension. Cheese goes in at the same moment, grated fine so it melts rather than strings.
The result should flow like a thick cream. If it sits like paste, the liquid was too low before the butter went in; loosen with a splash of warm stock, never cold water, which shocks the starch. If it runs like soup, the rice was overcooked and released too much starch; there is no fix at that point, only a note for next time.
How long can cooked rice stay before it is unsafe?
The risk has a name: Bacillus cereus, a spore-forming bacterium common in raw rice. Its spores survive boiling, and the vegetative cells that grow from them produce toxins that reheating does not destroy. The control is time and temperature, not smell.
Cooked rice should not sit at room temperature for more than about two hours in total, including the time it spends on the table. Cool it fast if you plan to keep it: spread it thin on a tray, or divide it into shallow containers, and refrigerate within that window. In the refrigerator it keeps safely for one to two days. Reheat once, until steaming throughout, and do not reheat the same portion twice.
The spores are the reason leftovers deserve attention. A rice dish that tasted fine at lunch can cause illness at dinner, because the toxin is not detectable by taste or appearance. The United States Department of Agriculture and the Food and Drug Administration both publish two-hour guidance for perishable food left out, and cooked rice falls under it.
Why does a domestic burner struggle with a wok?
A wok works by conducting heat through thin carbon steel into food that is constantly moving. On a restaurant range, the burner delivers a concentrated flame that the wok's curved base spreads across a wide surface. On a domestic stove, the burner is smaller and the flame less intense, so the wok's upper walls stay cool while the base overheats.
The consequence is a simple rule: match the load to the burner. A 30-centimeter wok on a standard home gas ring handles roughly 300 to 400 grams of prepared vegetables at a time. Beyond that, the food steams in its own moisture instead of browning, because the pan cannot return to temperature fast enough after each addition.
Cut size matters for the same reason. Thin, uniform slices cook through before they release much water; thick chunks sit in the pan long enough to flood it. A useful habit is to cut everything to a similar thickness, about the width of a coin for firm vegetables, and to keep the pieces dry before they go in. Water on the surface of the food is heat that never reaches the pan.
What order do Provencal vegetables go into the wok?
The order follows density and water content, not tradition. Firm, low-water vegetables go first, because they need contact time with the hot metal. In eastern Provence that means peppers, cut into strips, and small artichokes, quartered and rubbed with lemon. They take two to three minutes of near-constant tossing before they begin to soften.
Next come vegetables with moderate water: zucchini, cut into half-moons, and eggplant, salted briefly and patted dry. Eggplant is the difficult one, because its flesh is a sponge that releases water late. Give it room, and do not crowd it with the zucchini.
Last come tomatoes and herbs. Tomatoes are mostly water, so they go in at the end, just long enough to warm through and glaze the pan. Herbs follow off the heat: thyme, savory, and a little rosemary, torn rather than chopped fine, so they perfume the oil without burning. A squeeze of lemon at the end restores the acidity that high heat flattens.
How is a carbon steel wok seasoned?
Seasoning is a film of polymerized oil bonded to the steel. It forms when thin layers of a high-smoke-point oil are heated past their smoke point, where the fatty acids cross-link into a hard, slick surface. It is not a coating that comes from a factory, and it is not the same as leaving oil in the pan.
Start with bare carbon steel, scrubbed to remove the protective factory lacquer. Heat the dry wok over high heat until it darkens slightly, then add a teaspoon of neutral oil and wipe it across the entire interior with a paper towel held in tongs. Keep the wok moving until the oil smokes, then remove it from the heat and let it cool. Repeat three or four times. The surface should turn amber, then brown, then nearly black at the base.
After that, maintenance is simple. Rinse with hot water and a soft brush, never soap, and dry it on the burner. A thin wipe of oil before storage is enough. If the surface turns dull or sticky, the layer was too thick; scrub it back to bare metal and start again. A properly seasoned wok is not nonstick in the industrial sense, but it releases food, resists rust, and improves with every meal cooked in it.
The two methods share one principle. Heat, water, and time are the variables, and the cook who measures them gets a predictable result. The rest is practice.
